Want an easy reference to see which species are already being used in this story, and how? This is it. Below are all the characters, official and original, organized by species, order, class, or whatever's most conveniently applicable. (We're not trying to be scientific, here. It's a Sonic RP.)

Due to Sonic Chronicles, we're kind of unsure whether or not we should start allowing echidna fancharacters. To be discussed!
Felines
There seems to be no typified trait with cats. They're numerous and diverse.
Flying Mammals
Hedgehogs
In any Sonic community that condones hedgehog fancharacters, there will probably be a lot of them. We don't have any yet, but our excuse for it when it inevitably happens will be that Sonic's heroic exploits and numerous hedgehog acquaintances have inspired countless other members of his species to take up an adventurous lifestyle.
Humans
Humans do exist besides just Dr. Eggman, but they aren't particularly central to the story, nor are they probably the best to pick when making an original character. (Honestly, who comes to a Sonic RP to play a human, anyway?) And no, we don't count Sonic X, so there are no Thorndyke family members.

Mixed-breed characters go here.

We would just use the term "rodent," but that might include some other animals and be kind of counter-intuitive. So deal with it!
